Alright you guys, Monday is in full force. My pals are still in town and I’m struggling to get into my normal routine right now. You know how that goes, right? They fly out tomorrow and then two days later more friends and family arrive for the weekend. So it’s going to be a crazy week. Very fun, but a bit crazy. And then next Tuesday I leave for New York! Woo.
Anyway, today I’m sharing with you a super easy pumpkin bread recipe. Whenever Chris and I have friends come stay with us I always like to make some sort of yummy bread that we can munch on while everyone wakes up (and while we wait to get our Bloody Marys.)
So while my pal Roy and her boyfriend Goldie have been in town, I made this pumpkin bread. Not from scratch, no no, from something even better. This $2.50 mix from Trader Joe’s. Can a box mix be a “recipe?” Let’s say yes today.
In my opinion, the secret to taking a mix from good to great is just adding a ton of other stuff. Like for example with this mix I just added a bunch of chopped apples, craisins, and an assortment of nuts. Always more fruit and nuts.
Like I said, it’s super easy and it’s super cheap, just follow what Mr. Trader says to do. And that’s pretty much it. Can’t wait to see all of the other yummy food ideas popping up today!

Boxed mixes are totally recipes. It's only not one if you follow the directions on the back of the box to a T!

Boxed mixes can be a life saver sometimes. Like when I am dying of hunger and there are 99% chances I won't give my own recipes a shot.
That sounds yummy. It really is amazing what can happen when you just add a few things to a packaged mix.
